Simple Pasta Sauce


Olive oil.
• 1/2 an onion.
• 2 cloves of garlic.
• 200g/7oz of tinned tomatoes or passata.
• A handful of basil leaves.
• 1/2 a teaspoon of dried oregano.
• 1 teaspoon of sugar, maple syrup or honey.


This is a slightly sweet tomato sauce perfect for accompanying your favourite pasta.

1: Put a pan onto a medium heat and add some oil, olive oil preferably.

2: Chop up half an onion and add it to the pan.

3: While that’s cooking, finely chop two cloves of garlic.

4: Stir the onions occasionally while they soften, this should take about 10 minutes.

5: Now add the garlic and cook for another minute.

6: Add 200g or 7oz of passata (or tinned tomatoes) and stir.

7: Roughly chop a handful of basil leaves. Add to the pan, along with half a teaspoon of dried oregano.

8: Add a good teaspoon of sugar, maple syrup or honey and stir.

9: Allow to simmer for at least five minutes before using, although anything up to an hour will only improve the flavour.
