Orange-Baked Cod

Orange-Baked Cod


Olive oil.
• 2 150-200g (5.3-7oz) pieces of boneless cod.
1 orange.
Salt and pepper.
• 1/2 a teaspoon of dried thyme.
• 2 tablespoons of butter.
• 1/2 a lime.


Cod delicately baked with orange and thyme. Serves 2.

1: Add a little olive oil to the bottom of a baking tray, about a tablespoons worth.

2: Place two pieces of boneless cod down on top of the oil. These should weigh around 150-200g or 5.3-7oz each.

3: Zest an orange into a little pile then peel and separate.

4: Squeeze the juice of each orange segment over the cod, placing the juiced segments to the side of each piece of fish.

5: Sprinkle the zest over each fish.

6: Generously salt and pepper the pieces of cod.

7: Put a quarter teaspoon of dried thyme and one tablespoon of butter over each fish.

8: Place the baking tray into a preheated 160c/320f or gas mark 3 oven for half an hour or until the cod is cooked through and flakes easily. Cod is temperamental as far as fish go, so do check that it’s done especially if you’re not using a fan oven.

9: Serve with a slice of lime per fish and spoon some of the delicious orange butter over the fish before eating.
