Mushroom Burgers

Mushroom Burgers


• 2 big portobello mushrooms.
Olive oil.
Salt and pepper.
White wine/sherry vinegar or lime juice.
• 1/4 of an onion.
• 1/4 of a red or yellow bell pepper.
• 1 clove of garlic.
• 4-5 leaves of basil.
• 2-2.5 tablespoons of cheddar.
• 1 teaspoon of Dijon mustard.
• 1 teaspoon cumin.
• 1/2 teaspoon dried oregano.
• 1 tablespoon mayonnaise.
• 1 egg.
• 3 tablespoons of coarse breadcrumbs (such as panko).
• 4 lightly toasted burger buns.


This recipe makes four succulent mushroom burgers with notes of basil and oregano.

1: Chop two big portobello mushrooms into cubes, roughly six times one way and four the other.

2: Stick a frying pan onto a medium high heat and add a tablespoon of olive oil.

3: Add the mushrooms and a good sprinkle of salt, about a teaspoons worth, then stir.

4: Continue to occasionally stir the mushrooms while they reduce and turn a much darker shade. This will take roughly 20 minutes.

5: Once done add a splash of white wine or sherry vinegar, or lime juice, and stir.

6: The liquid will evaporate quickly, then take the mushrooms and put them in a mixing bowl of some kind. Leave to cool for at least 5 minutes before adding anything else.

7: Now, finely chop up a quarter of an onion, the same volume of red or yellow bell pepper (about a quarter of one), and one clove of garlic.

8: Add the chopped onion, garlic and bell pepper to the bowl, with a little black pepper.

9: Chop up a small handful of basil (4-5 leaves) and grate about 2 to 2.5 tablespoons of cheddar, then add to the bowl.

10: Now add 1 teaspoon of Dijon mustard, 1 teaspoon of cumin and half a teaspoon of dried oregano.

11: Put in a tablespoon or so of mayonnaise, crack in one egg and cover with about three tablespoons of coarse breadcrumbs.

12: Now combine the ingredients with a spoon or your fingers (remember to wash your hands afterwards as this contains raw egg). Put the bowl in the fridge for at least half an hour but preferably an hour before frying up the burgers.

13: Separate the mix into quarters and shape each quarter into a burger, put into a lightly oiled frying pan on medium heat. An egg ring can help the burger maintain its shape while it cooks and stiffens up.

14: Fry until the bottoms are browned, this should take about five minutes depending on the exact heat of the pan, then flip the burgers.

15: Fry for another three minutes or so until the other side of the burgers have browned, then place on burger buns.

Feel free to add any condiments and toppings you like, my personal recommendations would be Rarebit cheese sauce, which you can find the recipe for in the app, or a little mayo, hot sauce and sliced deseeded chillis.
