• 500ml/2 cups of puffed rice.
• 1/2 a red onion.
• 3 cherry tomatoes.
• A medium-sized potato that has been cooked/boiled.
• 3 teaspoons tamarind paste.
• Lemon juice.
• 1 teaspoon of garam masala.
• 1 teaspoon of cumin.
• 1/2 a teaspoon of chilli powder.
• A big handful of fresh coriander/cilantro.
A classic Mumbai street food. Sweet, tangy and delicious. A great side dish that serves 3.
1: Put a frying pan onto medium heat, add 500ml (which is roughly two cups) worth of puffed rice into the frying pan. Puffed rice can be a little variable in weight which is why we’re using volume measurement.
2: Stir occasionally while the puffed rice is in the pan.
3: Once the puffed rice is crisp, put into a bowl. If the puffed rice is fresh this should only take a minute or so.
4: Dice half a red onion, 3 cherry tomatoes and a medium-sized potato that has been fully cooked and add to the bowl.
5: Add 3 teaspoons tamarind paste, a squeeze of lemon juice, a teaspoon of garam masala, a teaspoon of cumin, and half a teaspoon of chilli powder.
6: Finally, roughly chop a big handful of fresh coriander/cilantro and add to the bowl along with salt to taste.
7: Stir together and serve immediately as the puffed rice will go soggy if left for too long.
